In a large bowl, combine flour, baking powder, milk, egg, cheese, and pepperoni, stirring until completely mixed. Spoon batter into the prepared mini-muffin cups. 4. Bake for 15-18 minutes. 5. Sprinkle with fresh chopped herbs, and serve with warm marinara for dipping. Makes 12 Puffs. Salmon Florentine
Serves 4

A delicious new salmon recipe that will make you appreciate spinach in a whole new way

Prep Time - 10 min
Cook Time - 30 min
Total Time - 45 min

Ingredients:

12oz lean, skinless salmon
1 tsp salt
1 tsp pepper
1 tsp garlic powder
2 tsp olive oil, divided
6 oz baby spinach
1 tsp salt
1/2 medium onion, finely chopped
2 tsp flour
2 cloves garlic minced
1 cup fat free cream
1/2 cup fat free chicken stock
1/2 cup grated parmesan

Instructions:

1.Heat a grill pan or skillet to medium high
2.Pat salmon dry with paper towels and season with salt, pepper and garlic powder
3.Grill salmon for 4-5 minutes on each side or until desired doneness is reached
4.Remove from pan to a plate and cover with aluminum foil to keep warm
5.In a large skillet heat 1 tsp of olive oil
6.Add in spinach and 1 tsp salt and cook until spinach is wilted, about 5-7 minutes
7.Remove spinach to bowl and set aside
8.In the same skillet add in remaining 1 tsp olive oil, chopped onion & flour stirring often
9.Cook onion until soft, about 5 minutes
10.Add in garlic and cook for an additional 1-2 minutes, stirring constantly to make sure garlic does not burn
11.Add in cream and chicken stock and stir until it begins to thicken, about 5 minutes
12.Add in cheese and stir until well incorporated
13.Remove from heat and stir in spinach
14.Divide sauce over each salmon filet
15.ENJOY!

Party Buffalo Wings
